Ingredients
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil or unsalted butter, melted
- 1/3 cup brown sugar or coconut sugar
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1/4 cup chopped nuts or dried fruits (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a bowl, combine the rolled oats, whole wheat flour, baking soda, and salt. Stir until well mixed.
- Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, brown sugar, honey, and vanilla extract until smooth.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips and any optional nuts or dried fruits.
- Scoop and Bake: Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden.
- Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
